This day kicked off with a 3.5 mile walk in the rain. Don’t forget to move your body! After my walk I enjoyed my lunch which consisted of sliced turkey, avocado, roasted pecans and a protein shake. After lunch I sipped on my keto coffee while I got ready for my day.
Next up was a delicious and low carb Savory Chicken Pot Pie! This recipe is so satisfying and wonderful on those chilly days or those days you want some comfort food. This recipe uses a biscuit top instead of a crust for the pot pie which makes this such a wonderful dinner without any of the guilt. We used this biscuit recipe for the biscuit top but you can use your own favorite biscuit recipe for the top. The filling is how we would normally make a vegetable and gravy filling but use this idea to swap out your favorite vegetables to keep this pot pie a staple recipe.
