Savory Keto Chicken Pot Pie

Ingredients
  

Biscuit Top

  • 4.5 tbsp melted butter
  • 1/3 cup coconut flour
  • 2 tbsp sour cream
  • 4 large eggs
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 1-1/3 cups cheddar cheese
  • 2 tbsp chopped parsley

Pot Pie Filling

  • 2-3 pounds cooked chicken or turkey
  • 4 tbsp butter
  • 1/2 medium white onion, chopped
  • 4 stalks celery, chopped
  • 3-4 cups frozen vegetable medley, chopped (broccoli, cauliflower, carrot)
  • 1/4 tsp pink salt
  • 1/4 tsp ground white pepper
  • 1/8 tsp nutmeg
  • 2 tbsp minced garlic
  • 3 cups chicken stock
  • 1/4 tsp poultry seasoning
  • 1/4 tsp dried thyme
  • 1 tsp xantham gum
  • 2 tbsp heavy cream

Instructions
 

  • The Pot Pie Biscuit top by with my variations each recipe will feed 8/9 servings
    1. Make biscuit top by adding all ingredients into a large bowl. Mix well and let set aside while making the pie filling.
    2. Make the pie filling by sautéing the chopped onion and celery in 2 tablespoons butter. Add salt and pepper to taste. Toss in leftover vegetables. Stir to heat through, about 2-3 minutes. Remove from pan and set aside.
    3. Make the white gravy by melting remaining 2 tablespoons butter with drippings from the pan. Add minced garlic and 1 cup chicken stock. Add poultry seasoning, thyme and simmer. Melt that altogether and let reduce. Add remaining chicken stock. Add 1 tsp xanthum and whisk immediately. Let simmer and add nutmeg. Stir well to combine, taste and adjust seasonings. Add a the heavy whipping cream. Add the cooked chicken/turkey with any remaining drippings to the mixture and combine.
    4. Spray a 9×13 pan with avocado oil spray. Add the pie filling to pan and flatten. Drop biscuits in by scant 1/4 c measure. Leave them as they spread out when baking. Should be 3 rows of 3 biscuits.
    5. Bake @ 350 degrees, 20-25 minutes, until biscuits are done
