Low Carb Sweet & Sour Chicken

Servings 4

Ingredients
  

  • 1-1/2 pounds chicken breast, diced
  • 14 oz green bell pepper, chopped
  • 1 tbsp avocado oil
  • 2 tbsp green onion, chopped
  • salt & pepper to taste

For the sauce

  • 1/2 cup sugar free ketchup
  • 2 tbsp coconut aminos
  • 2 tbsp apple cider vinegar
  • 2 tbsp BochaSweet or sugar free sweetener
  • 2 tbsp sesame oil
  • 1 tsp ground ginger
  • 1/4 cup water

Rice

  • 1 cup basmati rice, steamed
  • 1 pound cauliflower rice, steamed

Instructions
 

  • Instructions:
    Stir together all ingredients for the sauce in a bowl and mix.
    Lightly season chicken pieces with salt and pepper.
    Heat oil in a pan or wok.
    Add chicken and stir until lightly browned on both sides & cooked
    Add bell peppers and stir for another minute.
    Add sauce mixture in and simmer for 5 minutes.
    Mix cooked rice with cooked cauliflower rice (omit the basmati rice and just use cauliflower rice to keep keto).
    Top with spring onions and serve over a bowl of cauliflower rice.
    Makes 4 servings
