Keto Egg Noodle Stir Fry

This is such an easy and nutritious keto recipe that will certainly become a fast favorite in your recipe lineup. Switch it up by using different vegetables that you love. The egg noodles are super easy to make and really make this recipe stand out.

  • 6 large eggs
  • 2 pounds chicken breast, diced
  • 4 tbsp avocado oil
  • 1 green pepper, diced
  • 1 red pepper, diced
  • 6 cups broccoli & cauliflower florets frozen


  • 1/4 cup coconut aminos
  • 1 tsp Lakanto Golden monkfruit sweetener
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp ground ginger
  • 1/2 tsp turmeric
  • 1/2 tsp sesame oil
  • 1/2 tsp black pepper


  • Dice up all veggies into similar sized pieces or use frozen veggies. In a large pan cook chicken and set aside. Using the same pan sauté veggies until tender.
    Meanwhile, add eggs to a bowl and whisk together. In a small fry pan add enough egg mixture to cover bottom of pan in a thin layer. Swirl egg mixture around until solid and then flip. Repeat until all egg mixture is cooked. Layer egg "crepes" on top of each other and then roll all of them together to form a burrito shape. Using a sharp knife, slice tiny noodle sized strips.
    Mix the keto stir fry sauce together. Once veggies are sauted, add chicken back to the pan. Add the stir fry sauce and mix together. Finally, add egg noodles and combine.
