This meatloaf can really be made with any ground meat of your choice such as beef, pork or chicken. I really enjoy turkey meatloaf so we’re going to use ground turkey in in this recipe. Swap out the protein 1:1 if you want to switch it up.
- 3 pounds ground turkey
- 3 eggs
- 1 cup almond flour
- 1/4 cup grated Parmesan cheese
- 1 tablespoon Italian seasoning
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp pink salt
- 1/2 tsp ground black pepper
- 1/4 cup sugar free ketchup
Preheat oven to 375 degrees. Mix all ingredients together (except ketchup). Spray a nonstick spray on loaf pans and then divide mixture into 2 loaf pans. Spread evenly into pan and then add the ketchup on top. Bake for 30 mins or until center reaches 165 degrees.
To make this recipe into meatloaf croutons all you need to do is take this recipe and cut the leftovers up into 1 inch sized pieces. You’ll want 1 tablespoon of butter (or fat) per 2 servings of meatloaf melted in a fry pan. Add the meatloaf croutons into pan and let them crisp up on the edges.
