Steak Stir Fry

This is one of the meals I make 1x a week. You can easily switch up the veggies and use what random ones you have in stock. It’s a great way to not waste food because you don’t need many of each ingredient making it perfect for using up your stock and the flavors all work well together with the marinade. This is a great recipe for meal prep too. Simply dice everything up ahead of time and whip it up in about 15 minutes.

Steak & Veggie Stir Fry

Switch up the veggies or meats and make this recipe a million different ways!

Ingredients
  

  • 2 pounds steak (sirloin, flank, etc)
  • 2 tbsp avocado oil
  • 1 green pepper
  • 1 medium white onion
  • 4 cups broccoli
  • 4 cups riced cauliflower
  • 1/4 cup chia seeds optional
  • 1 tsp sriracha optional

Marinade

  • 1/3 cup coconut aminos
  • 1/2 tsp turmeric
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp ground ginger
  • 1 tbsp brown swerve sweetener
  • 1/4 tsp black pepper
  • 2 tsp sesame oil

Instructions
 

  • Pan fry or grill steaks.
    In a medium fry pan add avocado oil on medium heat and add all veggies except riced cauliflower. Cook until tender.
    In the same pan, make a hole in the center of the veggie mix and crack eggs into center. Scramble them until cooked and then mix with the rest of the veggies. Add marinade and chia seeds and let simmer for a 2-3 minutes.
    Microwave riced cauliflower and dice steak up.
    Spoon out cooked cauliflower into 6 bowls. Add veggies and then chopped steak.
    Take the flavor up a notch by adding sriracha! Enjoy!
