Mediterranean Cauliflower Salad
Ingredients
- 400 grams cauliflower riced
- 4 persian cucumbers diced
- 1 cup cherry tomatoes halved
- 2 cups arugula chopped
- 1/4 red onion diced
- 1 avocado diced
- 1/3 cup roasted pecans chopped
- 2 oz parmesan cheese (or feta)
Dressing for salad
- 1/4 cup extra virgin olive oil
- 1 lemon juiced
- 1 tsp Dijon mustard
- 2 cloves garlic
- 2 TBS oregano
- 1 tsp paprika
- salt & pepper to taste
Instructions
- Chop all ingredients into similar bite sized pieces and place in large bowl. Mix all dressing ingredients up and then pour over salad. Mix well and enjoy!
