This recipe was very tasty and hit the spot. If you are keto I would suggest using chicken thighs and straight cauliflower rice.
Low Carb Sweet & Sour Chicken
Ingredients
- 1-1/2 pounds chicken breast, diced
- 14 oz green bell pepper, chopped
- 1 tbsp avocado oil
- 2 tbsp green onion, chopped
- salt & pepper to taste
For the sauce
- 1/2 cup sugar free ketchup
- 2 tbsp coconut aminos
- 2 tbsp apple cider vinegar
- 2 tbsp BochaSweet or sugar free sweetener
- 2 tbsp sesame oil
- 1 tsp ground ginger
- 1/4 cup water
Rice
- 1 cup basmati rice, steamed
- 1 pound cauliflower rice, steamed
Instructions
- Instructions:Stir together all ingredients for the sauce in a bowl and mix.Lightly season chicken pieces with salt and pepper.Heat oil in a pan or wok.Add chicken and stir until lightly browned on both sides & cookedAdd bell peppers and stir for another minute.Add sauce mixture in and simmer for 5 minutes.Mix cooked rice with cooked cauliflower rice (omit the basmati rice and just use cauliflower rice to keep keto).Top with spring onions and serve over a bowl of cauliflower rice.Makes 4 servings
