This casserole can be made up quickly and ahead of time for a great keto meal prep idea. You can make this recipe several ways to keep it interesting and on plan. For example, dice up the chicken for a casserole or stuff the chicken with this recipe for another delish dinner. I enjoy this pesto chicken recipe with cherry tomatoes but I also like to swap the tomatoes with broccoli or another green veggie.
Pesto Chicken with Roasted Asparagus
This is one of the simplest keto dinner ideas I have. Swap out the veggies or change up the preparation of the chicken for a wonderful low carb dinner casserole. Serve with your favorite veggie!
- 2 pounds chicken breast diced
- 1/2 cup pesto
- 6 oz mozzarella cheese shredded
- 100 grams cherry tomatoes
- 724 grams asparagus, raw
- 6 tbsp avocado oil
- salt & pepper to taste
Preheat your oven to 400 degrees. Spray a 9×13 casserole dish with avocado oil spray. Dice the chicken and place in the dish. Cover with pesto and the mozzarella cheese. Sprinkle the tomatoes on top and bake for 20-25 minutes. Meanwhile, cut the ends off the asparagus and put in a roasting pan. Drizzle the avocado oil, salt and pepper over the asparagus and mix. Bake for 20 minutes. Enjoy!
