These are the ultimate stuffed burger. Seriously. You won’t ever have a better burger than this. The Wolf Burger is a recipe my mom has made for us all our lives and I was so happy that it is keto approved. In fact, it’s perfect for keto dieters LOL!

The middle is stuffed with Boursin cheese, red onion, sliced tomato, and large pepperoni. You can get real creative and stuff them with all kinds of other cheeses, veggies and meats.

Here’s how to make them!

Using 73/27 ground beef (you can do 80/20 too) divide into 4 ounce balls. I like to use my kitchen scale so they all come out the same size. Using a small bowl (or a fancy burger press), line it with cellophane and put one 4 ounce burger ball in and squish it to form a cup shape. Smooth it up the sides too. Make sure it’s consistent and smoothed out so your burger cooks evenly. Next, add layer a pepperoni, diced red onion, generous hunk of Boursin cheese, tomato, pepperoni again and then add the second 4 ounce patty. Smoosh it down well to make one big patty and prevent any holes for the ingredients to escape during cooking. Repeat this for the rest of your burgers. I like to make these up ahead to keep my keto meal prep easy.

We prefer to smoke them at 300-350 degrees with about 10 mins per side. They are done when the inner temp hits 160. Enjoy!!

  • 1-2 pounds ground chuck (73/27 or 80/20)
  • red onion, diced finely
  • tomato, sliced thin
  • 1 package Boursin Cheese
  • 10 or more slices of pepperoni
