This is a new favorite breakfast or lunch keto bread idea that doesn’t contain eggs! I found this keto bread recipe from The Diet Chef and it’s a home run recipe. I just made a small change and bumped up the protein powder since I’m always looking for ways to get my protein macros in. I am also learning other ways to use this recipe and today I made “egg mcmuffins” with this recipe.
Keto Bread Recipe: (makes 2 servings)
1 cup almond flour
2 scoops unflavored protein powder
1 tsp powdered Lakanto
1 tsp baking powder
1/2 tsp xantham gum
140 grams water
Mix all dry ingredients together in a bowl. Line a baking sheet with either parchment paper or a non stick spray if you don’t have a silicon mold for the muffin tops. Add water to the dry ingredients and mix well. Divide batter into 6 muffin tops and bake in a preheated oven for 14 minutes at 350 degrees.
