This is a new favorite breakfast or lunch keto bread idea that doesn’t contain eggs! I found this keto bread recipe from The Diet Chef and it’s a home run recipe. I just made a small change and bumped up the protein powder since I’m always looking for ways to get my protein macros in. I am also learning other ways to use this recipe and today I made “egg mcmuffins” with this recipe.
Keto Bread Recipe: (makes 2 servings)
1/2 cup almond flour
1 scoops unflavored protein powder
1/2 tsp powdered Lakanto
1/2 tsp baking powder
1/4 tsp xantham gum
1/3 cup water
Mix all dry ingredients together in a bowl. Mix dry ingredients and then add the water. Pour into a microwave safe bowl that would make a great “toast shape”. Microwave for 2 mins. You can either stop at this point or toast the keto bread. I enjoy my bread toasted for extra stability so I pop it in my air fryer (line a baking sheet and cut into 4 pieces) and toast for 4 mins at 400 degrees.
