This is such a delicious and easy recipe for those times when you don’t want to miss out on a Mexican cuisine. You can make it up ahead of time and use it for keto meal prep ideas since it’s easy to reheat on the go. Feel free to switch up the protein and use ground turkey, beef or chicken.
I used this recipe and multiplied it by 5 and stored the seasoning blend in a mason jar. I used 6 tablespoons of the blend with 3 pounds of beef. Then I set aside half of the seasoned beef to use for my Tex-Mex baked eggs and used the remaining half for this recipe. This recipes makes 6 servings.
Tex Mex Skillet:
1 pound green peppers, chopped
1/2 pound onion, chopped
1-1/2 pounds ground beef
3 Tablespoons Tex-Mex seasoning
2 cups Mexican blend shredded cheese
shredded lettuce (optional)
Brown the meat in a pan and add seasoning. Remove from skillet and then saute the peppers and onions until tender in the same pan. Add meat back into skillet and mix. Cook for another 5 minutes.
Add shredded lettuce to a large bowl and add 1/6 of a serving of the meat and veggies. Top with 1/3 cup shredded cheese and enjoy!
