Keto Tex-Mex Baked Cheesy Eggs

This recipe is great for those days you don’t know what to do with the leftover hamburger meat from either taco Tuesday or Mexican dishes. I’m really loving the Tex-Mex seasoning from this recipe so that’s what I used for my baked eggs.

Recipe:
3 oz ground beef, cooked (I used this recipe)
2 eggs
1/3 cup Mexican cheese, shredded

Preheat oven to 400 degrees. Add leftover ground beef, layer eggs, and cheese on top. Bake for 15-20 minutes.
