Keto Sheet Pan Chicken & Veggies

This is such an easy keto meal to make because it is all cooked in the same pan and you can use any veggies you have in the fridge. Switch up the veggies and/or protein and enjoy all the combinations you can think of. I like to do this recipe to use up the random veggies left over in my fridge each week.

Recipe:

1 pound 12 oz chicken
13 oz broccoli florets
428 g squash (summer & zucchini)
167 g white onion
100 g brussels sprouts
6 TBS avocado oil
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp pink salt
1/2 tsp black pepper
1 TBS Italian seasoning

Preheat oven to 400 degrees. Measure all veggies and add oil, salt and pepper. Spread on a large baking sheet. Add remaining oil and spices. Place on top of the veggies and roast for 25 minutes. Check on the veggies and if you want a bit more char on the veggies placing them under the broiler for 5 minurtes. I suggest removing the chicken and cover with foil so it doesn’t dry out.
