If you watched my tasty video on my YouTube channel today, you must be looking for this delicious recipe from my mother-in-law, Charlotte. I’m lucky to have a mother from the north and a mother-in-law from the south to get so many awesome recipes and influence for my baking/cooking.
These yummy keto biscuits are quick and easy to make and a great on the go breakfast or snack. Here’s how to make them!
2 lbs breakfast sausage
8 oz cream cheese
6 eggs, beaten
2 cups shredded cheddar cheese
2/3 cup coconut flour
1 tsp baking powder
Saute sausage in a fry pan and remove excess grease. Set aside and cool for 5-10 minutes. Next combine dry ingredients together and set aside. Beat the eggs and then add to the cooled, cooked sausage. Add cream cheese, cheddar cheese, and dry ingredients and mix well. Using a 1/4 cup measuring cup, scoop out and form 26 balls. Place on a greased cookie sheet and bake for 40 minutes at 350 degrees.

These sound fabulous and I definitely plan to try them! I would suggest an easier way to make the balls is to use an ice cream scoop, the type that has the thumb mechanism that scrapes out the contents. They come in all sizes, so just pick the size you like. I could see making these as appetizers and using the smallest scoops for a single bite size. I would also suggest using a silpat or other type of silicone or other baking sheet so none of the good stuff is lost from sticking to the surface.
I made these this morning and they are very good! I am always looking for an easy, grab and go breakfast option (or any meal for that matter) and this recipe was delicious and easy to make. Thank you and Charlotte for sharing the recipe!
