It’s Friday and we’ve made it to day 5! We are almost half way through the challenge. At this point things should start to make sense and you’re getting the hang of the simplicity of the keto lifestyle. Day 5 is a keto day so let’s start with lunch!
For lunch today I was found these low carb cauliflower wraps to make a breakfast burrito. I scrambled 3 eggs in a half tablespoon of butter and then added 2 tablespoons of my favorite salsa. I put my wrap in the microwave for 10 seconds, added a slice of cheddar cheese and then added the scrambled eggs and salsa on top. Yum!
Afternoon snack was my keto coffee which consisted of black coffee, 2 tablespoons heavy cream and 1 scoop Perfect Keto unflavored collagen.
Dinner tonight is one of my favorite and most common meals to make. I love to season my top sirloin steaks with yellow mustard, salt, pepper, and Worcestershire sauce and grill them to perfection. Meanwhile, I sliced summer squash into thin slices and then added them to a roasting pan. I usually do about 6 ounces of squash with 2 tablespoons avocado oil per person. I season with garlic powder, salt, pepper and Italian seasoning. Bake the squash at 400 degrees for 20 minutes depending on thickness of your slices.
Dessert was my delicious Greek yogurt mixed with strawberry collagen. So tasty and satisfying! Plus, if I’m running short on my protein, fat free Greek yogurt is a great wat to bump up the protein.
