Keto Protein Pumpkin Bars

This recipe was inspire by this recipe but I made a few variations to it. I love what happens to the texture of baked goods when you add whey protein so I had to incorporate that into this recipe. These keto pumpkin bars will absolutely satisfy your pumpkin needs for the Fall. Here’s how you make them!

What you’ll need:
2 scoops unflavored whey protein powder
1 cup almond flour
1/4 cup coconut flour
1/2 cup Lakanto Classic Sweetener
1 tsp baking soda
1/2 tsp pink salt
2 tsp cinnamon
2 tsp pumpkin pie spice
1 tsp ginger
1 tsp nutmeg
1/2 tsp allspice
1/4 tsp cloves
1/2 cup butter
2 eggs
1 TBS vanilla extract
1 cup pure pumpkin puree
1 dropper full liquid stevia

1/2 sugar free chocolate chips

Combine all the dry ingredients together in a bowl or stand mixer. Add wet ingredients and mix together. Add your chocolate chips and spread into a 9×13 baking dish. Bake at 350 degress for 30-35 minutes. Makes 12 servings.
