Keto Meatballs With Zucchini Fries

This is such a delicious dinner that will leave you feeling so satisfied. You can meal prep the meatballs or use leftover meatballs to make this even quicker for a weeknight meal. The zucchini fries can be made several ways but I wanted to show you what my smart oven and air fryer can do with them. The results were fantastic!

What you’ll need for the meatballs:

2 pounds ground beef
2 eggs
5 garlic cloves
100 grams of red onion
1 tsp salt
1 TBS Italian seasoning

Either chop the garlic and onion by hand or use a food processor and grind it up. Transfer to a large bowl and add the rest of the ingredients. Mix well and form into meatballs. I used an ice cream scoop to make mine go quicker to get 12 meatballs. Each meatball was roughly 2 total carbs. Bake at 400 degrees for 18 minutes and then flip them. Bake for additional 8-10 minutes.

You can make the zucchini fries the old fashioned way and just roast or grill them with avocado oil, salt & pepper or you can try an air fried version like this:

3 large zucchini
3 eggs
3 scoops unflavored whey protein powder
1/3 cup grated parmesan cheese
1/2 tsp garlic powder
1/2 tsp pink salt
1/4 tsp black pepper
3 TBS psyllium husk powder (or oat fiber)

Whisk the 3 eggs together in a bowl and set aside. Mix the whey, parmesan cheese, garlic powder, salt, pepper in a shallow bowl and set aside. In another bowl add the psyllium husk (or oat fiber) and set aside.

Take the zucchini and dip into the psyllium husk, then the egg wash, and then the final bowl. Tap off any excess and add to a greased pan or air fryer basket. Repeat until all ingredients are used up. Don’t crowd the pan. Bake at 400 degrees for 18 minutes in an air fryer or oven. I recommend this Breville smart oven/air fryer! Serve with a sugar free marinara sauce or ranch dressing!
