I don’t know about you but I love cucumbers! I do like cucumber salad with mayo based dressings but my favorite is a vinaigrette dressing which is much healthier for you. You can swap out the vinegar and use your favorite vinegar like balsamic, red wine, white, etc. Also I love to swap out the cheese too with this basic keto recipe. Sometimes I do feta cheese, other times I do mozzarella but cheddar tastes great too!
Ingredients:
12 oz English cucumber, peeled
2 oz red onion, finely diced
3 oz cheese (mozzarella/feta/cheddar)
1 TBS olive oil
3 tsp red wine vinegar
3 drops liquid Monk fruit sweetener (or 1/2 tsp granulated keto sweetener)
salt & pepper to taste
Slice peeled cucumber, dice red onion and add to a medium sized bowl. Add cheese and the rest of the ingredients. Mix well and serve! Makes 4 servings.
