Keto Chicken & Veggie Soup

This is an easy plop and drop keto soup that will certainly check all the boxes. I typically make this soup when I have random leftover veggies that need to be used up. I also like to use shredded cabbage to act like a noodle making this a very hearty soup. Switch it up and make it yours!

What you’ll need:
1.5 pounds of chicken
2 tablespoons butter
2 stalks celery, diced
1 zucchini, diced
1 yellow squash, diced
1/2 medium onion, diced
1/2 tsp garlic powder
2 tablespoons Italian seasoning
2 (32 oz) boxes of chicken broth
15 oz can diced tomatoes
1/2 head cabbage, shredded
salt & pepper to taste
Pesto (optional)

Using an instant pot saute diced zucchini, squash, onion, and celery in butter. Add garlic powder and Italian seasonings and mix. Add in the two boxes of broth and mix again. Add chicken and cook on high for 30 minutes.

Quick release the instant pot and shred chicken. Add diced tomatoes and cabbage and cook for another 5 minutes. Quick release and season with salt and pepper to taste. Serve with 1 tablespoon prepared pesto and with a large ladle full of soup. Enjoy!
