Keto Chicken Kabobs

I love kabobs! Use this recipe and swap out with your favorite protein. I found that I like to just do the protein on the whole kabob and grill up my veggies separately so I cook the chicken evenly. I know there are lots of folks who have been able to get the veggies cooked by the same time the chicken reaches temperature. I end up burning my veggies or under-cooking my protein when I put them on the same skewer so this method works best for me. You do you!

Veggies:
8 oz onion
6 oz yellow
5 oz green
1.5 lbs squash
2 TBS avocado oil
salt & pepper

Chicken kabobs:
1 TBS avocado oil
1/2 tsp garlic powder
1 TBS italian
1/2 tsp salt
pepper to taste

In separate bowls combine all ingredients. I usually mix up the chicken with the spices first and set aside to let it marinate a bit will I prepare my veggies. Slice up your veggies in evenly sized pieces for the grill. Add oil, salt and pepper and mix so that everything is mixed. Now, using skewers add your chicken (or protein of choice).

Grill veggies on a grillin’ mat to make your life easy! Serve with cauliflower rice and enjoy!

  1. I enjoy the recipes you share but wish you would also share a photo of how it looks like when finished. I’m not very likely to try a new recipe if I don’t see what it looks like when done!
