This is a new favorite breakfast or lunch idea that doesn’t contain eggs! I found this keto bread recipe from The Diet Chef and it’s a home run recipe. I just made a small change and bumped up the protein powder since I’m always looking for ways to get my protein macros in.
Keto Bread Recipe: (makes 2 servings)
1/2 cup almond flour
1 scoop unflavored protein powder
1/2 tsp powdered Lakanto
1/2 tsp baking powder
1/4 tsp xantham gum
70 grams water
1 hass avocado
Mix all ingredients together and pour into a microwave safe baking dish that has been greased. I use avocado oil spray and a tupperware container that makes a great flat bread shape. Bake in microwave for 2:30 and allow to cool before slicing.
Take a whole avocado. Remove the flesh and mash into a bowl until smooth and creamy. Slice the bread into 2 slices and then spread avocado on top.
