Cheesy Cauliflower Chicken & Rice

This is a quick and easy dinner recipe that is very similar to one of my favorite sauces, alfredo, but without the carbs! I use one pan for the whole dish so clean up is just as easy. You can switch it up and add different cheeses for a more grown up kind of alfredo sauce or keep it traditional as prepared.

You’ll need:

1 pound chicken
1/4 tsp garlic powder
1/4 tsp salt & pepper
8 oz broccoli florets
2 TBS avocado oil
3 cups (1 bag) riced cauliflower
1/2 tsp garlic powder
4 TBS heavy cream
2 TBS butter
4 oz cream cheese
1/2 cup parmesan cheese

Add your chicken to a pan and season with garlic, salt & pepper. Cook and remove from pan. Next add your oil and broccoli and cook broccoli until tender. Add riced cauliflower and the rest of the ingredients. Mix well and serve! Makes 4 servings.
