Baked asparagus is a great keto side dish that pairs well any protein. I personally like to enjoy asparagus with beef, pork or chicken. Sometimes I keep the asparagus long and other times I chop them up into 1″ long pieces. Switch it up and have fun with it!
1 pound asparagus, trimmed
4 cloves fresh garlic
1 Tablespoon avocado oil
3 Tablespoons heavy cream
4 oz mozzarella cheese, shredded
1/4 cup parmesan cheese, shredded
salt & pepper to taste
Preheat oven to 350 degrees. In an oven safe baking dish layer the trimmed asparagus. Drizzle the oil, garlic and salt & pepper and mix until everything is well coated. Pour the cream evenly over the asparagus. Top with the cheeses and place in oven to bake. Bake for 20-25 minutes or until tender and bubbly.
