Keto Chicken Kabobs

I love to make chicken kabobs with the random veggies in my fridge. They are easy to make and taste delicious! Serve them with a side salad or steamed green beans for an easy keto dinner recipe. You can switch it up and use different veggies.

  • 1 pound of chicken breast, diced
  • 2 zucchini, sliced
  • 1 onion, chopped
  • 1 green pepper, chopped
  • salt & pepper to taste

I like to grill them up and serve them with keto ranch dressing or chimichurri sauce.

Simple Keto Ranch Dressing

This is an updated keto ranch dressing to my original blog post. I like to switch things up and after being keto for so long, it’s nice to have another go-to ranch dressing. It’s super easy to make and if you use a large mason jar it will keep in the fridge up to a week. Be warned, we barely get ours to last a week. My kids use ranch to eat everything with and it even gets them to eat gobs of vegetables!

Here’s how to make it! Serving size is 2 Tablespoons.

  • 100 grams mayonnaise
  • 35 grams sour cream
  • 58 grams heavy whipping cream
  • 1/2 tsp dill
  • 1 tsp chives
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1 tsp apple cider vinegar
