Buffalo Chicken Meatballs With Garlic Green Beans

This yummy keto meal can be made as an appetizer or as an entre. You can use your favorite dipping sauce or dressing to take these chicken meatballs up a notch. Serve with your favorite side dish!

Buffalo Chicken Meatballs With Garlic Green Beans

Ingredients
  

Chicken Meatballs

  • 2 pounds ground chicken
  • 2/3 cup almond flour
  • 1/2 cup parmesan cheese
  • 1/2 tsp garlic powder
  • 2 large eggs
  • 1 tbsp dried chives
  • 1/2 tsp onion powder

Buffalo Sauce

  • 4 tbsp butter
  • 1/2 cup hot sauce

Garlic Green Beans

  • 9 cups green beans 83g x 9 servings
  • 2 tbsp butter
  • 1 tsp garlic powder
  • salt & pepper to taste
  • 1/4 cup parmesan cheese optional

Notes

In a large mixing bowl combine ground chicken, almond flour, parmesan cheese, garlic powder, onion powder, chives, salt & pepper and egg. Use hands or spoon and mix well. 
Spoon meat into meatballs about 1.5″ in diameter. I got 32 balls from this recipe. Bake at 400 degrees for 15-18 minutes.
Meanwhile, steam green beans until done. Drain and put back into pot. Add butter, garlic, salt & pepper and mix. 
In a microwave safe bowl melt butter and hot sauce for 30 seconds.
