Baked Chicken With Cauliflower Soup

This is an easy recipe for those nights where it’s wicked cold and you want a refreshing bowl of hot soup. The recipe for the soup can be found with this link. You can use an instant pot, crock pot or dutch oven to make the soup. Here’s how to make the chicken!

Baked Chicken

Prep Time 5 minutes
Cook Time 20 minutes
Servings 6

Ingredients
  

  • 2 pounds chicken breast
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • salt & pepper to taste

Instructions
 

  • Preheat oven to 400 degrees.
    Spray a 9×13 roasting pan with avocado oil. Place chicken in pan.
    Sprinkle all spices over raw chicken and rub onto both sides. Bake for 20 mins or until juices run clear.

Notes

I like to re-use spice containers and make up a big batch of salt, pepper, garlic, onion powder and paprika. I will keep it handy for those nights where I’m in a rush and need a dry rub that tastes great on chicken or beef!
