Bacon Wrapped Chicken With Roasted Veg

This recipe can be made many ways. Switch up the cheeses to keep it interesting. The chicken is wrapped in my homemade bacon (recipe coming soon) which makes it especially tasty without all the junk. I like to serve this with a roasted vegetable so this is a great way to use up random veggies from the refrigerator.

Bacon Wrapped Stuffed Chicken With Roasted Veg

Ingredients
  

Bacon Wrapped Chicken

  • 2 pounds chicken breast
  • 12 slices sugar free bacon
  • 12 tbsp Boursin cheese (or aged cheddar or cream cheese)
  • 1/2 tsp garlic powder
  • 1/2 tsp pink salt

Roasted Vegetables

  • 1 large cauliflower head
  • 4 cups broccoli florets
  • 1 medium white onion
  • 1 large zucchini
  • 6 tbsp avocado oil
  • 1/2 tsp pink salt
  • 1/2 tsp black pepper

Instructions
 

  • Preheat oven to 400 degrees.
    Tenderize chicken breasts by pounding each breast with a meat tenderizer (or fry pan). Place chicken breast between two layers of parchment paper to keep the splash down. Once chicken breast is around a half inch thick, sprinkle each breast with garlic powder, salt and pepper to taste. Next, spread Boursin cheese inside the breast and roll chicken length ways. Wrap chicken tightly with 2-3 slices of bacon and secure with toothpicks if needed. Repeat with each chicken breast.
    Place on a parchment paper lined baking pan and bake for 30 minutes or until internal temperature is 165 degrees.
    Next, chop cauliflower florets off stem and add to roasting pan. Chop a medium onion and zucchini into large chunks. Add broccoli florets. Pour avocado oil all over veggies and add salt and pepper to taste. Mix well. Roast in the oven with chicken.
