These are the ultimate stuffed burger. Seriously. You won’t ever have a better burger than this. The Wolf Burger is a recipe my mom has made for us all our lives and I was so happy that it is keto approved. In fact, it’s perfect for keto dieters LOL!

The middle is stuffed with Boursin cheese, red onion, sliced tomato, and large pepperoni. You can get real creative and stuff them with all kinds of other cheeses, veggies and meats.

Here’s how to make them!

Using 73/27 ground beef (you can do 80/20 too) divide into 4 ounce balls. I like to use my kitchen scale so they all come out the same size. Using a small bowl (or a fancy burger press), line it with cellophane and put one 4 ounce burger ball in and squish it to form a cup shape. Smooth it up the sides too. Make sure it’s consistent and smoothed out so your burger cooks evenly. Next, add layer a pepperoni, diced red onion, generous hunk of Boursin cheese, tomato, pepperoni again and then add the second 4 ounce patty. Smoosh it down well to make one big patty and prevent any holes for the ingredients to escape during cooking. Repeat this for the rest of your burgers. I like to make these up ahead to keep my keto meal prep easy.

We prefer to smoke them at 300-350 degrees with about 10 mins per side. They are done when the inner temp hits 160. Enjoy!!

  • 1-2 pounds ground chuck (73/27 or 80/20)
  • red onion, diced finely

  • 1 package Boursin Cheese
  • 10 or more slices of pepperoni

KETO MASON JAR ICE CREAM

I love making keto ice cream because it’s a tasty treat when you need it that is keto approved and also fun to make. You don’t need any fancy equipment to make this easy keto dessert. All you need is a mason jar, ingredients and some muscle.

I am showing you have to make 2 variations of this keto ice cream but it is easy to come up with your own flavors! Here’s how you can make your own keto ice cream in a mason jar.

Enjoy this easy and fun keto mason jar ice cream! Poor all ingredients into a mason jar, secure lid, and shake your booty! Shake for at least 3-5 minutes or until you no longer can hear it move when you shake it. Place in freezer and enjoy in 3 hours!

Recipe #1

  • 1 cup heavy whipping cream (240 ml)
  • 4 Tablespoons coffee or espresso
  • 4 Tablespoons natural peanut butter
  • 1/2 tsp monk fruit sweetener
  • 1/4 tsp vanilla

Recipe #2

  • 1 cup heavy whipping cream (240 ml)
  • 2 Tablespoons Cookies & Cream Protein Powder
  • 5 drops liquid Stevia
  • 1/4 tsp vanilla

Recipe #3

  • 1 cup heavy whipping cream (240 ml)
  • 1-2 Tablespoons unsweetened cocoa powder
  • 2 Tablespoons natural peanut butter
  • 2 Tablespoons Swerve
  • 1 Tablespoons Lily’s Chocolate Chips
  • 1/4 tsp vanilla

So I combined several recipes I found and took my favorite parts of each recipe to make this keto protein donut recipe. This recipe is easy, tasty and kid approved. These keto donuts make great snacks or breakfast on the go. Especially good for those days you may want a treat too.

These can be topped or decorated with your favorite toppings like melted dark chocolate or Swerving icing. They taste amazing by themselves too so have fun with this recipe and customize it to your tastes. Sometimes I’ll make it chocolate by swapping the peanut butter for 4 tablespoons cocoa powder plus 2 tablespoons heaving whipping cream.

Another idea would be to add Lily’s chocolate chip muffins. Enjoy these tasty keto donuts because they are only 3 net carbs!

Calories: 257    Carbs: 3g    Fat: 23g    Fiber: 0g

Ingredients:

  • 150 grams cream cheese
  • 70 grams natural peanut butter (1/4 cup)
  • 60 grams Protein Powder (2 scoops)
  • 1/4 cup olive oil
  • 2 large eggs
  • 1/2 tsp baking powder
  • 1/2 tsp xantham Gum
  • 6 drops Liquid Stevia
  • 1/2 tsp vanilla extract
  • 1/4 tsp Pink Himalayan Salt

Directions:

Add cream cheese and peanut butter to a microwave safe bowl and microwave for 20-30 seconds to soften, Add the rest of the wet ingredients and mix.

Add dry ingredients and mix well.

Combine all ingredients and pour into donut molds. Makes 12 small donuts. Bake at 350 degrees for 18 minutes.

OPTIONAL:

Add melted Lily’s chocolate  on the tops for a glazed look.

Add 1/4 cup Swerve (powdered) with 1/4 tsp vanilla and 2 tablespoons unsweetened almond milk for another glaze option.

Keto Roasted Pecans

So a lot of the store bought nuts contain unwanted ingredients like soybean oil and sugar. Plus, nuts cost a ton so why not make your own? This way you can control what goes in your tasty snacks.

Here’s what you’ll need. A 2lb bag of nuts (I’m on a pecan kick right now so that’s what I’m using), 4 tablespoons butter (or fat of your choice), and pink Himalayan sea salt.

Pre-heat your oven to 300 degrees. Melt butter and pour over nuts. Add salt and mix until evenly coated. Roast in the oven for 10 mins. Remove and flip the nuts so they roast evenly. Add more salt to taste. Place back in the oven for another 8-10 mins.

Once they cool down you should store in a air tight container. Viola!

Each serving of pecans is one ounce or 30 grams.

Week 9 Keto Transformation

Well, another week has passed since my last update. It’s now been 9 weeks or 63 days since I started my keto transformation. I can hardly recognize the girl in the before picture. So much has changed both mentally and physically.

In 9 weeks I managed to lose 40 pounds off my body with a ketogenic diet plus intermittent fasting. My keto results are something to be proud of!

I went from wearing a size 20/22 on the bottom to a size 16/18. My tops used to be size 2 or 3XL and now I wear XL/1XL. I can wear my wedding band on my finger again which makes me so happy!

KETO MEATLOAF CROUTONS

What a way to reinvent your keto meatloaf leftovers? Try making keto meatloaf croutons and serve them over your favorite salad! Use my keto meatloaf recipe if you don’t already have a fantastic recipe.

All you have to do is dice up your meatloaf into small cubes. Add 2 tablespoons of butter to a fry pan and add meatloaf. Brown the meatloaf until you have a nice crust. Serve over salad! YUM! So quick and easy!

 

Keto Meatloaf Italian Style

I have been making this meatloaf recipe as long as I can remember. My mom is Italian and I learned a lot about cooking by watching her and my Noni cook everything with an Italian spin. Naturally, the meatloaf would be inspired as well with it’s rich notes of Marsala wine, the trinity (onion, celery, and carrot -which I replaced with a pepper instead), and Parmesan cheese.

Prepare this recipe up ahead of time and just stick it in the oven when it’s time to cook. Reheat and recreate other recipes using the leftover meatloaf too! I love to make meatloaf croutons and put them over a salad of mixed greens. Seriously, it’s amazing!

You’ll want to saute the diced peppers, onion, & celery up ahead of time so that they are not crunchy in your meatloaf. My kids won’t eat their meatloaf if they see chunks of peppers and onions, despite the fact that they absolutely love raw peppers with ranch as a snack. So I always cook them first so they are soft but full of flavor in my keto meatloaf. You will also want to make my sugar free keto ketchup for this recipe.

Once the veggies have sauted in butter, hit them with a splash of Marsala wine and render. Add the veggie medley to the rest of the recipe and mix well. Place on a baking pan and top with ketchup. Bake at 400 degrees for 30 mins, or until the center is 160 degrees.

Ingredients:

  • 1 large green pepper, diced
  • 1 medium onion, diced
  • 2 large celery ribs/stalk
  • 2 pounds ground chuck (or ground turkey)
  • 1 egg
  • 1 tablespoon butter
  • 2 tablespoons Marsala wine (optional)
  • 1/2 cup Parmesan cheese
  • 1/4 cup almond flour (finely ground)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon Italian seasoning
  • 1-1/2 teaspoons pink salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons sugar free ketchup

MONTH 2 UPDATE

Wow, I can’t believe it’s already been 2 months since I decided to change my life. So much has changed in such a short time. I can’t believe I ever let myself get to 309 pounds. I can’t believe the difference losing 38 pounds of fat, eating keto and incorporating intermittent fasting can make on your body. My photos make it look like I’ve lost more than 38. If I had to guess and didn’t know what I did to lose the weight, I would say it looks more like 50 lbs than 38!

So where do I even begin? Two months ago I would wake up tired, grumpy, not motivated to do anything, and disgusted with the person I saw in the mirror. I thought about sugar 24/7 and never skipped a meal. Nothing fit in my closet including my underwear, bras and wedding band. I was so miserable, unhappy and had no self worth to change my life. I wasn’t even the best mom because I didn’t like going out and doing things with my kids. I would sit on the bench at the park instead of play with them. Even having been diagnosed with heart failure wasn’t enough to scare me.

It gets boring on the side lines watching everyone else have fun. I wanted to live life again and stop hiding from the person I am. I wanted the old me back. The old me that was so happy, full of life, attractive, strong, and a fighter. I decided I was fed up and either I give this one last try or look into surgery. Something had to change.

So it was either “get busy living or get busy dying”.

Something finally ignited inside me. The aggressive nature I keep tucked away and hidden from everyone is coming back. The secret side of me, that unless you know of my past athletic accomplishments, is ready to come back out. The super human strength that I naturally have that allows me to be physically stronger than pretty much all females and sadly, a lot of males LOL. The girl that used to play softball and be the “clean up” batter, also known as the 4th person on the roster to smash the ball out of the park for a grand slam. The girl who used to compete in weightlifting and could bench press 225 pounds, clean and jerk 175 and dead lift 300. The girl who played center in basketball and would get all the rebounds. The girl that was in countless fights at school because she fought off her sister’s many bullies. That girl was so strong. She only knew how to win and be great. That girl was not afraid of anything. She was fearless.

Good news, that girl was me. All of it. It’s all still inside me and it’s going to give me the strength this time to fight my own battle. I’m taking a break from fighting for everyone else. I may have lost weight battle the past 13 years because I put everyone else first but I have not lost the war. I’m back and nothing will get in my way!

On February 11, 2019 I decided to change my life.  My plan was to live a ketogenic lifestyle, incorporate intermittent fasting, and create a presence on social media to keep myself accountable. My plan was to not give up or give in no matter how hard it was. The first week was BRUTAL. I wanted to give up and wasn’t even sure I could make it through the first week. I channeled all the anger and inner strength that was built up inside me from the past 13 years. Out came the beast from my past!

I stepped on the scale a week later and lost 12 pounds! I did it! I smashed my goal by 7 pounds too! Week 2 I woke up feeling changed. It gave me strength to push on. I didn’t wake up tired, I didn’t miss sugar, I had so much energy, I was literally PUMPED! Week 3 & 4 was glorious and I was ready to post my month one results. I lost 24 pounds in my first month!

Month 2 has been smooth sailing. I almost want to say it has been…. easy. I had one set back in week 5 because I didn’t lose anything that week. But I didn’t let it wipe the smile off my face. I was going to trust the process and keep fighting. By this time my support system was growing incredibly and the amount of people cheering me on is crazy! I love that I’m helping people change their lives too! It’s like the icing on the cake.

In 59 days, I have lost 38 pounds of fat from my body! I love the person I see in the mirror again. I love that she’s a fighter. I love that she loved herself enough to change her life to start living again. With 102 pounds left to lose, I’m glad she is inside me fighting for me because the war to lose weight is so. fucking. hard.

I see the light at the end of the tunnel. I have the confidence that I’m going to hit my goal weight of 169. In fact, at this pace I’ll be in one-der-land in 3 more months! I’m so excited to continue this journey!

KETO APPROVED KETCHUP

Think of the recipes you can make if you were able to make a keto approve ketchup! Everything from dips, BBQ sauce, marinades, and condiments. I was skeptical that this ketchup would be gross but as I learn how to cook keto… real food tastes so much better!

You’ll need a keto approved sweetener like Swerve to make this recipe. You;ll also need a squirt bottle or mason jar. You can find mason jars at your local grocery store or use this link to order from Amazon.

This is such an easy recipe and I found it from wholesomeyum.com. Here’s how you make it!

Ingredients:

6 oz Tomato Paste
1 cup Filtered Water
1/4 cup Swerve (Lakanto Sweetener or Swerve)
3 tbsp White vinegar (or apple cider vinegar)
1 tsp Pink Sea Salt
3/4 tsp Onion Powder
1/2 tsp Garlic Powder
1/4 tsp Paprika
1/8 tsp Ground Cloves
