Keto Chocolate Peanut Butter Chocolate Chip Ice Cream

Shut the front door! Are you ready for this recipe?! This keto ice cream is amazing…. literally a party in your mouth!! There’s a couple of ways you can make this keto approved ice cream. I like to use my stand mixer but if you don’t have a stand mixer you can use a hand mixer or even a mason jar.

So I was inspired by several of the recipes I’ve seen floating around on the internet. I decided to take my favorite parts of each recipe and make my own. You can mix and match flavors to come up with your own combo. The peanut butter I use is found at my local grocery store in the bulk bins. You can grind your own peanut butter right in the store. This way I’m sure my peanut butter has 0 sugar.

Use this method to make with a KitchenAid stand mixer and ice cream machine.

  1. Pour heavy whipping cream, Swerve, vanilla, unsweetened cocoa powder and liquid stevia into the mixing bowl. Mix until light peaks form. Add in natural peanut butter and chocolate chips. Mix until blended.
  2. Pour into ice cream machine and make ice cream

Use this method if you don’t have a KitchenAid stand mixer or  ice cream machine.

  1. Pour all ingredients into a large mason jar and secure lid tightly.
  2. Shake until the contents inside no longer move.
  3. Freeze for 3 hours.

Once the ice cream has frozen it will need to be thawed for about 10 minutes before serving. It scoops best this way!


Week 6 Weigh In Keto Results


Wow, 42 days have passed since I decided to change my life with keto and intermittent fasting. Six whole weeks. I did it! First goal smashed! Here’s my most notable changes:

  • I feel like a new person!
  • Energy is  off the charts amazing!
  • No brain fog.
  • More productive in my days!
  • No hungry 24/7 anymore!
  • Dealing with emotions instead of eating them!
  • Happier.
  • More self worth.
  • Learned how to say no.
  • Clothes fit that I haven’t worn in years!

I am so proud of myself for losing 28 pounds in 6 weeks. Not only have I lost weight, but I have also lost 10 inches from my belly. It brings me such joy to make these positive changes to my life. There’s no way in hell I’ll go back to eating a high carbohydrate and fat free diet. Nope!

Here’s my week 1 verses week 6 pictures. I actually need smaller pants because the ones i was wearing don’t hold me in anymore like they used to! Or shall I say the week 1 pictures is actually a little misleading since my pants were holding my belly in more than the picture shows haha! Either way, I’m noticeably smaller!

Keto Cauliflower Mac & Cheese

I loveeeeeeeeeeeee mac and cheese. It legit was my “go to” that got me to 309 pounds. Naturally, my mom came up with this recipe for me. It tastes delicious! You can switch out the cheeses for different flavors too! I like to add some crunch on the top by using Parmesan Whisps. This step is optional. Here’s how I make my keto cauliflower mac and cheese.

Using a head of cauliflower, cut off the stems so you just have the florets. Chop the florets up a bit and put in a large sauce pan. Add 2 cups of chicken broth and cover. Let steam for 10 mins or until cauliflower is tender. Drain and set aside.

Meanwhile, prepare the cheese sauce. I like to freshly shred my own cheeses but you can your packaged shredded cheeses. Dice up all the cheeses and add to sauce pan. Add the heavy whipping cream, cheeses, spices, and salt to taste. Once all melted add the cauliflower back in to the pan and stir.

I like to individually portion my mac and cheese. I find if I add it to my plate I can easily have too much so putting into a small bowl helps control my potions. Lastly, squish up the Parmesan whisps over the top to give it a little crunch. Add more cheese, butter and broil until cheese gets slightly browned. Viola!



  • 1 head of cauliflower
  • 4 ounces sharp cheddar cheese
  • 4 ounces Velveeta Cheese
  • 2 ounces cream cheese
  • 1/2 cup heavy whipping cream
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp turmeric
  • 1/4 tsp chili powder
  • pink salt & pepper to taste
  • Parmesan Whisps

Makes 6-8 servings

Keto Chicken Stir-Fry

This is one of the meals I make 1x a week. You can easily switch up the veggies and use what random ones you have in stock. It’s a great way to not waste food because you don’t need many of each ingredient making it perfect for using up your stock and the flavors all work well together with the marinade. This is a great recipe for meal prep too. Simply dice everything up ahead of time and whip it up in about 15 minutes. It seems like there’s been a constant theme being keto… spend less time eating and more time living! I dice everything up ahead of time, cover with plastic wrap and put in fridge until I’m ready to cook it. This saves me so much time because I meal prep when I have time–sometimes that may be in the middle of my day, sometimes it’s the night before. It’s all about planning! Having a plan keeps you on a track to success.

So here’s the recipe and it makes 6-8 servings.

Keto Chicken Stir-Fry

  • 1 zucchini, diced
  • 1 yellow squash, diced
  • 1 medium onion, diced
  • 1 green pepper, diced
  • 2 cups broccoli florets, chopped
  • 1 bag riced cauliflower
  • 2 eggs
  • 2 tablespoons butter
  • 4 tablespoons extra virgin olive oil
  • 1 pound chicken, diced
  • 1 teaspoon sriracha


  • 1/3 cup coconut aminos (this tastes identical to soy sauce)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon turmeric
  • 1/2 ginger
  • 1 tablespoon swerve sweetener
  • 1/4 teaspoon black pepper


  1. In a medium fry pan add 2 tablespoons olive oil on medium heat. Add diced chicken and cook until juices run clear.
  2. In large fry pan add the remaining olive oil and all veggies except riced cauliflower.
  3. Once chicken is cooked add chicken and all the juices to veggies and mix.
  4. Using the smaller fry-pan crack the 2 eggs and scramble. Add to veggies/chicken and mix.
  5. Microwave the bag of cauliflower (follow directions on bag) and then add to veggie/chicken mixture and mix.
  6. Pour marinade and stir until combined.
  7. Serve immediately and take the flavor up a notch by adding sriracha!

Keto Ranch Dressing


Ranch dressing is my absolute favorite dressing, mainly because whether I am keto or not, ranch is still my favorite salad dressing. So I was very pleased to hear that ranch dressing was allowed on keto. I make two different versions of ranch dressing so it’s not the same thing all the time. I personally never measure my ingredients since I’ve made these dressings for years but these recipes are pretty identical to mine.

Another bonus is kids LOVE ranch. Store bought ranch just doesn’t taste as good as homemade ranch. My kids will eat ANYTHING as long as I let them dip their food in ranch. So if you want your kids to eat veggies… let them dip! My kids eat so consume so many vegetables willingly and my secret is ranch or roasting the veggies in olive oil, salt & pepper.

So here’s a couple ranch dressing recipes I make. The serving size is 2 tablespoons. I like to just put my salad on a scale, zero it out, and then add the ranch by weight (28 g).

Keto Ranch Recipe 1:

  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • 2 tsp vinegar (white distilled or apple cider)
  • 2 cloves garlic minced
  • 1 tablespoon parsley
  • 1 teaspoon chives
  • 1 teaspoon onion powder
  • 1 teaspoon salt

Keto Ranch Recipe 2:

  • 1 cup Mayonnaise
  • 1/2 cup Sour cream
  • 1/4 cup heavy cream
  • 2 tsp Lemon juice
  • 2 tsp Dried parsley
  • 1 tsp Dried dill
  • 1 tsp Dried chives
  • 1/2 tsp Garlic powder
  • 1/2 tsp Onion powder
  • 1/2 tsp Sea salt
  • 1/4 tsp Black pepper


Mix both these recipes up and store in a mason jar. I make a batch weekly and put it on everything from salads, veggies, and dips.

What’s Stopping You From Changing Your Life To A Ketogenic Lifestyle?

Just like the title says…. what’s stopping you? What are you afraid of? Yes, there’s a lot of “experts” out there that are bashing the keto lifestyle. In fact, another well known diet, Weight Watchers, is publicly shaming keto. But why? Well, it’s pretty obvious to me.

Money. It’s always about money.

There is no way to make money off of you if you can eat real food and lose weight for free. Of course, there is going to be upset folks about this as this is a major threat to the weight loss industry as a whole! The weight loss product industry is a multi billion dollar industry. Not to mention the pharmaceuticals, health care professionals and insurance industries… yeah they don’t want you losing weight this way either. If you can get off your medications because you lost weight and took charge of your health… they stop making money. Now don’t get your panties all in a bunch… not all health care professionals feel this way. A LOT OF THEM support keto!! In fact, that is how I even heard about keto in the first place. My cardiologist recommended it! All I’m saying is, keto is a hot topic right now because if done correctly, it can change your life and it’s free.

There are risks to keto. If you use keto to drop weight quick but then go back to eating in excess with your old habits.. it can be dangerous! You can’t do sugar AND fat together in excess. You must pick to fuel your body with ketones OR glucose. Mixing sugar and fat in excess creates cholesterol problems, diabetes, heart disease, etc. Yo-yo dieting is hard on your body too. Keto is not a fad diet. It’s a commitment to a new way of eating and throwing away everything you were taught about dieting before. Things like fat that we avoided at all costs are now welcomed. I was a skeptic. But I have lab work to prove my results on keto have changed my health for the better!

Now that we have that cleared up, what other reasons scare you off? Do you think you couldn’t give up bread, pasta, sugar, and everything else that is white? I will say, that first week is BRUTAL to get through. No lie. I almost didn’t make it. But with anything else in life… when one door closes another opens! There’s another way of eating that is just as satisfying! You get to have healthy fats, healthy salt (pink Himalayan sea salt), protein and dairy! Yes, dairy! Plus, you will feel AHHHHHHHHHHH-MMMAAAAZING! That alone makes up for the 10 minutes of bliss eating something full of sugar & carbs and then having very little energy to take on your day.

With the popularity of the ketogenic diet being more mainstream now, there’s a lot of recipes that replace our former favorite recipes. I will make a separate post for this for reference. Some of these new replacement recipes are so tasty that I don’t even feel like I’m missing out anymore.

I cannot believe my energy, stamina, and lack of hunger on the ketogenic diet compared to a traditional fat free, high carb diet. I don’t think of food as often because I actually get full now. I’m more productive for two reasons – one being I’m not spending my entire day eating/snacking and two, because I’m not spending my entire day eating I have more free time to accomplish more in my day. My life literally revolved around food before. It revolves around saving myself FROM food now.

Eating is no longer a hobby anymore LOL. Eating is now my medicine. Health starts with food. The food I put in my body is to keep my body as healthy as possible. I’m no longer going to abuse my body with food. Eating like I did made me morbidly obese. Why would I want to eat that way again? Hard pass for me.

Do you think it is too expensive to eat keto? We used to spend $500 a week on groceries for our family of 4. That didn’t even include eating out. No wonder we never had any money! I would buy an entire week’s worth of food and then go out to eat. What in the actual F*CK?! How stupid is that. Or, I wouldn’t buy groceries because I sucked at planning and then HAVE to eat out because we had nothing to eat in the house. It was a viscous cycle. We threw away good food because it spoiled and my waistline constantly grew larger. I now make weekly menus, shopping lists, and grocery shop 1-2x a week. We haven’t thrown a single piece of food away in a month. Our grocery bill is now $100-$150 a week and we buy top shelf stuff like organic, pasture raised, etc. So not only is our grocery bill cheaper, the quality of our food is exponentially better!

When you eat fat, you stay fuller longer. That means you can easily add in intermittent fasting without a hitch. If you’re not hungry, listen to your body! It’s ok to skip a meal. In fact, when your body is not constantly digesting food it can repair itself, which makes you healthier! I will make a separately video on the many benefits of intermittent fasting. Obviously, it’s important to note that you also have more time in your day when you get to skip meals and it’s also a grocery budget saver!

Keto Approved Drinks

Here’s a video for keto approved drinks. It’s pretty straight forward though. Stay away from sugary drinks. I personally like to drink lots of filtered water from my Berkey, herbal teas, sparkling water and once in a while a Coke Zero.

Always read your labels. Look at the carbs and sugar and if it’s higher than 1 or 2 mg…. stay away! When you are keto, carbs add up quick so you don’t want to blow your day on a drink that has hidden sugars.

My favorite sparkling water is Dasani Lime or Lemon. You can even add in a shot of tequila to make the lime one alcoholic. It’s refreshing and a great substitute for a margarita. Additionally, you can drink red, dry wines, like Cabernet or Coke Zero with a shot of rum.

Watch the sugar on the sparking waters. Some do contain sugars, other use artificial sweeteners.



I DID IT!! It’s week 4 and my official first month update!! Each week has gotten easier because this is becoming my new routine and the new me. My energy is high, my sugar cravings are now gone, I’m stronger emotionally, and I know what I’m capable of now. I am getting so much done with my business, so productivity is benefiting my bottom line as well. It seems like a dream but it’s really happening!

I started exercising as a way to destress my life. I am finding other ways to cope and I urge you to find something physical to channel those emotions that make you seek comfort in food.

My biggest piece of advice that I can tell you at this point of my weight loss journey is to PLAN & PREPARE all your food for the week. You will be less likely to cheat or go off plan if you have foods at your reach. Foods that are on plan! Plus, making a menu (or meal prepping) saves you so much money with your grocery budget.

Also, you need a support system in this journey. You need support for times when you are tempted to go off track, someone to help motivate and inspire you, and someone who won’t tempt you with foods that you cannot have. If you have someone in your life that is sabotaging you, you need to remove them.

Lastly, in the past 28 days I was able to lose 24 pounds on keto. Look at the difference only 1 month has made on my body physically. I put on the same outfit to see how my clothes fit. My shirt was piss tight around Christmas time. Fast forward to a month on keto and my shirt fits like it’s supposed to.

My boobs fit so much better in my bra. I’m at least down a cup size in my bra. My back rolls are smaller, my pants fit higher on my belly and my love handles are almost gone. Amazing!!


And compare it to week 1. My belly is almost flatter than my boobs in the side view. My boobs shrunk as much as my belly did lol. Remarkable difference! So not only do I feel like a new person, my body is taking shape too! Stay tuned for a meal planning video!

Well, another week in the books! Week 3 is complete and the results are in. I am feeling so amazing. I’m so much stronger when it comes to will power and my energy is the highest it has been since I was in my 20s. I managed to lose 22 pounds in 3 weeks because today I weight 287. Remember now, I started 3 weeks ago at 309 pounds. That is so crazy!

One thing to make a note of when doing the keto diet. You don’t lose weight the same way as traditional diets. Keto tends to have a peeks and valleys downward trend. In other words, you drop a bunch of pounds, then maybe up a pound, then another big drop… and repeat. It’s perfectly normal so don’t focus on the scale.

Take your measurements so you see progress when the scale is not showing a loss. When I started this weight loss journey, my hips were 60″ with a soft tape measure. Today, my hips are 57″ so that’s 3″ off my hips already.

I’m so motivated to keep pushing on. It’s getting easier now so that helps. My sugar cravings are almost gone so I believe I’m becoming fat adapted. If you’re skeptical of a keto lifestyle, I urge you to watch my videos and subscribe to my YouTube channel!
